Aunt Chick’s Gluten-Free Cookie Recipe

The perfect gluten-free cookie recipe to use with our Aunt Chick’s Cookie Cutters. Soft and flavorful cookies with the warming spice of cinnamon and the perfect amount of sugar to make them not too sweet but delicious!

Cream

  • 1 1/2 C. Sugar
  • 3 eggs
  • 1 C butter
  • 2 tsp vanilla
  • 1 tsp almond extract

Then add:

  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 4 1/4 C. Bob’s Red Mill Gluten Free 1-to-1 Baking Flour (gradually add another 1/2 cups of flour slowly until dough is workable)
Refrigerate the dough for at least 30 minutes.
Roll out the dough on parchment paper until 1/4″ thick.
Make sure to flour your cutter regularly. Press the cookie cutter into the dough (this should make a good mold of the cookie cutter). Then cut around the edges, removing the exterior excess dough. Place the cut-out cookie dough carefully on a parchment-lined cookie sheet.
Bake at 325 for 15 mins
