Lemon and poppy seed together makes for a scrumptious cookie recipe. And with the use of our Aunt Chick’s Cookie Cutters these cookies just need a little cream cheese frosting to decorate to add to their sweetness. You will be surprised how fast these little cookies are picked off your plate!
Yields 2 – 2 1/2 dozens of small flower cookies.
- Zest of one lemon (cose to 2 tsp)
- 1/2 cup unsalted butter – room temperature
- 3/4 cup confectionery sugar
- 1 tsp lemon extract
- 1/2 tsp vanilla extract
- 1 1/2 tsp poppy seeds
- 1 1/2 cup flour
- 1 tsp baking powder
- 1/2 tsp salt
All these items can be combined with a mixer. Cream butter and confectionery sugar. Add zest, lemon and vanilla extracts. Sift baking powder, salt and flour together. Add half at a time to creamed ingredients. Roll out on light amount of confectionery sugar. Baking on parchment paper preferred.
Time: 5-6 minutes for smaller cookies – for larger cookies check every minute past.
