Aunt Chick’s Reduced Sugar Shortbread Cookies


  • 1 cup unsalted butter, room temperature
  • 3-1/2 tbsp granular stevia (Truvia preferred)
  • 1/4 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tbsp cornstarch
  • 1/4 tsp salt


Assemble all ingredients: preheat oven to 350 F.

Place butter, stevia, sugar, egg and vanilla extract in large mixing bowl. Using paddle attachment or mixer, cream for 1-1/2 minutes, set aside.

Blend flour, cornstarch and salt together in a medium bowl. Fold dry ingredient mixture into creamed mixture.

Put half dough in plastic wrap and chill for approximately 45 min. or until slightly firm.

Roll one portion of dough at a time to 1/8-inch thickness on a lightly floured surface. Cut with cookie cutter and place cookie sheet with parchment paper on it.

Bake in preheated oven 11-12 minutes or until edges of cookies are light golden brown. Slide parchment paper off cookie sheet and cool cookies before removing.

To decorate we used luster dust mixed with a little vodka to make a paint-able mixture (vodka will disparate). Gold for her hair, silver for her dress and white on her wings. While her wings were still wet (we did these last) we sprinkled them with white edible glitter to give the little angel some sparkle.
