Reduced Sugar Shortbread Cookies

Aunt Chick’s Reduced Sugar Shortbread Cookies

Follow this recipe for our delicious reduced sugar shortbread cookies, perfect for cookie lovers who don’t want to be too sweet!

Ingredients:

  • 1 cup unsalted butter, room temperature
  • 3-1/2 tbsp granular stevia (Truvia preferred)
  • 1/4 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tbsp cornstarch
  • 1/4 tsp salt

 

Assemble all ingredients: preheat oven to 350 F.

Place butter, stevia, sugar, egg, and vanilla extract in a large mixing bowl. Using paddle attachment or mixer, cream for 1-1/2 minutes, set aside.

Blend flour, cornstarch, and salt together in a medium bowl. Fold dry ingredient mixture into creamed mixture.

Put half dough in plastic wrap and chill for approximately 45 min. or until slightly firm.

Roll one portion of dough at a time to 1/8-inch thickness on a lightly floured surface. Cut with the cookie cutter and place a cookie sheet with parchment paper on it.

Bake in preheated oven for 11-12 minutes or until the edges of cookies are light golden brown. Slide parchment paper off the cookie sheet and cool cookies before removing.

To decorate we used luster dust mixed with a little vodka to make a paint-able mixture (vodka will be disparated). Gold for her hair, silver for her dress, and white on her wings. While her wings were still wet (we did these last) we sprinkled them with white edible glitter to give the little angel some sparkle.
