Aunt Chick’s Mint Cutout Cookie Recipe

Mint and dark chocolate… who doesn’t love that combination? Now, Aunt Chick’s brings you this heavenly mixture in this easy-to-make recipe. The nice thing with this recipe too is you can change the flavoring you use from Mint to any flavor extract that you prefer and Green food coloring to any color of the rainbow! Try this recipe and we know it will be a hit with your guests!

CREAM TOGETHER (with the mixture):

  • 1 cup butter
  • 1 1/2 cups confectioner’s sugar

ADD IN  (with the mixture) :

  • 1 egg
  • 1 tsp vanilla extract
  • 2 tsp mint extract
  • Green food coloring (we used paste food coloring and measured it by how green we wanted it)

SIFT TOGETHER (in a separate bowl):

  • 2 3/4 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt

MIX TOGETHER:

Add the flour mixture one cupful at a time to the wet ingredients. Mix by hand until dough forms a ball.

MAKE & BAKE:

Roll on floured parchment paper and cut to desired shapes. Bake at 400° for 7-8 minutes.

 

Dark Chocolate Icing Recipe

  • 1 1/2 cups powdered sugar
  • 1/2 cup dark chocolate cocoa (unsweetened)
  • 3 Tbs water
  • 2 Tbl corn syrup
  • 1-2 tsp mint extract

Mix powdered sugar with cocoa and sift them (sifting helps get out the lumps!) then add water, corn syrup, and extract. Mix until smooth. Add more water or powdered sugar if it’s too thin or thick for you to pipe on.
